How to cook it

  1. Soak the short ribs in cold water for 1 hour, changing the water once, to draw out blood, then blanch 5 minutes and drain.

  2. Grate the pear and blend it with the soy sauce, sugar, minced garlic, and ginger for the braising sauce.

  3. Boil the eggs 9 minutes, cool, and peel.

  4. Combine the ribs, sauce, and measured water in a heavy pot and bring to a boil, then cover and simmer 45 minutes.

  5. Add the chunked radish and carrot and the peeled eggs and simmer, covered, 30 minutes more until the meat is fork-tender.

  6. Uncover and simmer 10 minutes to thicken the sauce, finish with sesame oil, scatter with scallions, and serve for a special weekend dinner.
