How to cook it

  1. Blanch the pork bones for 5 minutes, drain and rinse, then simmer them with the water, the daikon in chunks, the cilantro root, 3 smashed garlic cloves and the white pepper for 1 hour, skimming the foam.

  2. Mince the remaining garlic and fry it slowly in the oil until golden, then keep the garlic and oil together in a bowl.

  3. Season the broth with the fish sauce, light soy sauce and sugar. Roll the ground pork into small balls and simmer them in the broth until they float, about 5 minutes, adding the sliced pork for the last minute.

  4. Soak the rice noodles until pliable, then blanch a portion at a time with a handful of bean sprouts in a strainer dipped into the boiling broth, about 30 seconds.

  5. Put the noodles and sprouts in bowls, add the pork and pork balls, spoon over a little garlic oil and ladle in the hot broth.

  6. Top with scallions and cilantro and let everyone season their own bowl at the table with chili flakes, sugar and fish sauce. On weekdays this is usually bought from a noodle stall; the home pot is a weekend cook.
