How to cook it

  1. Soak the rice vermicelli in hot water until pliable, then drain and set aside on a platter.

  2. Wash and cut the water spinach and napa cabbage into manageable lengths, slice the mushrooms, and cube the tofu.

  3. Arrange the raw beef, vegetables, mushrooms, tofu, noodles, and herbs on platters around the table.

  4. Bring the broth to a simmer in a pot set over a portable burner in the middle of the table.

  5. Let each eater drop their own beef, vegetables, and tofu into the simmering broth to cook briefly, then lift out and eat with the noodles and herbs.

  6. Keep the broth topped up and simmering throughout the meal so there is always something cooking.

  7. Ladle the last of the flavorful broth into bowls with the remaining noodles to finish the meal.
