How to cook it

  1. Soak the dried chilies in hot water for 10 minutes, then drain.

  2. Blend the softened chilies, shallots, garlic, shrimp paste and bruised lemongrass into a paste.

  3. Heat the oil in a pot over medium heat and fry the paste until fragrant and slightly darkened, about 5 minutes.

  4. Add the ground pork and cook, breaking it up, until no longer pink.

  5. Stir in the cherry tomatoes and simmer, mashing them into the pork as they soften, until the mixture thickens into a loose relish, about 15 minutes.
