How to cook it

Cut the chicken into bite-size pieces, dip in the beaten egg, then dredge in 1/2 cup cornstarch.

Heat the frying oil to 350F and fry the chicken until golden and crisp, about 5 minutes, then drain.

Simmer the orange juice, zest, soy sauce, rice vinegar, sugar, garlic, ginger, and red pepper flakes in a skillet, about 4 minutes.

Stir the remaining cornstarch with 2 tbsp water and whisk it in until the sauce thickens, about 1 minute.

Toss the fried chicken in the sauce to coat evenly.

Scatter with scallions and serve over steamed rice.
