How to cook it

  1. Pound the garlic and chilies into a rough paste with a mortar and pestle, or mince very finely.

  2. Stir the fish sauce, soy sauce, oyster sauce, and sugar together in a small bowl.

  3. Heat the oil in a wok or large skillet over high heat and fry the garlic and chili paste for 20 seconds until fragrant.

  4. Add the ground pork and stir-fry, breaking it up well, until browned and cooked through, about 7 minutes.

  5. Pour in the sauce and toss until it coats the pork and turns glossy, about 1 minute.

  6. Kill the heat, fold in the holy basil until just wilted, and transfer to plates.

  7. Fry the eggs separately in a hot pan with a little oil until the whites are set and the edges are crisp and lacy but the yolks stay runny, about 2 minutes.

  8. Top each plate with a fried egg and serve over the jasmine rice.
