Pound the garlic and chilies into a rough paste with a mortar and pestle, or mince very finely.

Stir the fish sauce, soy sauce, oyster sauce, and sugar together in a small bowl.

Heat the oil in a wok or large skillet over high heat and fry the garlic and chili paste for 20 seconds until fragrant.

Add the ground pork and stir-fry, breaking it up well, until browned and cooked through, about 7 minutes.

Pour in the sauce and toss until it coats the pork and turns glossy, about 1 minute.
