How to cook it

  1. Soak the rice noodles in hot water until pliable, about 10 minutes, then drain.

  2. Whisk the fish sauce, tamarind paste, and sugar for the sauce.

  3. Heat 1 tbsp oil in a wok over high heat and fry the tofu until golden, then the shrimp until pink, and remove both.

  4. Add the remaining oil and garlic, push to one side, and scramble the eggs.

  5. Add the drained noodles and sauce and toss until the noodles absorb the liquid, about 3 minutes.

  6. Return the shrimp and tofu, add the bean sprouts and scallions, and toss to heat through.

  7. Serve topped with crushed peanuts and lime wedges.
