How to cook it

  1. Preheat the oven to 425 F and pat the chicken completely dry with paper towels.

  2. Rub the softened butter all over the skin and inside the cavity, then season generously with the salt and pepper.

  5. Let the chicken rest for 10 minutes before carving so the juices settle, and serve with the pan juices spooned over the top.
