How to cook it

Mix the masa harina, warm water, and salt into a soft, pliable dough, then let it rest 10 minutes, covered.

Divide into 8 balls and press each into a thin round between sheets of plastic, using a tortilla press or the bottom of a heavy skillet.

Brown the ground beef in a skillet, breaking it up, about 6 minutes, then season with the chili powder, cumin, and salt, and simmer with a splash of water 5 minutes.

Heat 2 inches of oil in a heavy pot to 375F. Fry each masa round, using tongs to fold it in half as it puffs, until crisp and golden, about 1 minute, then drain on a rack.

Gently pry open each puffed shell and fill with the seasoned beef, lettuce, tomato, and cheddar.

Serve immediately while the shells are crisp.
