How to cook it
-
Gently separate the fresh noodles and toss them with the dark soy sauce until evenly tinted.
-
Heat 2 tablespoons of the oil in a wok over high heat and fry the noodles in two batches, pressing them against the hot wok and leaving them until charred in spots, about 3 minutes, then divide among plates.
-
Toss the pork with the white pepper and a teaspoon of the oyster sauce. Add the remaining oil and the minced garlic to the wok, then the pork, and stir-fry until it changes color.
-
Add the yellow bean sauce, the rest of the oyster sauce, the light soy sauce, sugar and broth, bring to a boil, then add the Chinese broccoli cut into pieces, stems first.
-
Stir the tapioca starch into 1/4 cup of cold water, pour it in and stir until the gravy turns glossy and coats a spoon, about 1 minute.
-
Ladle the gravy over the noodles and put the chilies, sliced into the vinegar, on the table. Usually a bought one plate lunch; at home it is a quick weekend meal.
