How to cook it

  1. Coil the sausage on a rack over medium charcoal, or lay it in a dry frying pan over medium low heat.

  2. Cook slowly, turning every few minutes, until the casing is browned and blistered and the inside is cooked through and no longer pink, 12 to 15 minutes; high heat splits the casing before the middle is done.

  3. Rest for 2 minutes, then slice on the diagonal into bite-size pieces.

  4. Serve with sticky rice, thin slices of young ginger, fresh chilies and cucumber, the way a Chiang Mai family puts it beside a nam prik. Sai ua is bought from the market by the coil; most recipes season it with shrimp paste, so check if anyone avoids shellfish.
