Cut the tempeh into small cubes.

Soak the dried chilies in hot water 10 minutes, then drain and blend with the shallots and shrimp paste into a paste.

Heat half the oil in a skillet over medium-high heat and fry the tempeh in batches until golden and firm, about 4 minutes per batch; drain and set aside.

Heat the remaining oil in the same skillet and fry the paste over medium heat, stirring often, until darkened and fragrant, about 6 minutes.

Stir in the tamarind paste and salt and cook 1 minute more.
