  1. Rinse the rice in cold water, swirling and draining, until the water runs mostly clear.

  2. Drain well and let it sit in the strainer for 10 minutes so the grains absorb a little moisture.

  3. Combine the rice and water in a heavy pot, cover, and bring to a boil.

  4. Lower the heat to a bare simmer and cook 12 minutes without lifting the lid.

  5. Turn off the heat and let it rest, covered, 10 minutes, then fluff with a rice paddle.
