  1. Soak the black soybeans in water for at least 20 minutes, then drain.

  2. Rinse the rice and combine it with the soybeans, measured water, and salt in a heavy pot.

  3. Bring to a boil, then cover and lower the heat to a bare simmer.

  4. Cook 13 minutes, then rest off the heat, covered, for 10 minutes.

  5. Fluff with a rice paddle, distributing the beans through the rice, before serving.
