How to cook it

  1. Soak the dried wood ear in hot water 20 minutes until softened, then shred it along with the bamboo shoots and tofu into thin strips.

  2. Bring the chicken broth to a boil and add the tofu, wood ear and bamboo shoots.

  3. Simmer 5 minutes, then stir in the white pepper, rice vinegar, soy sauce and salt.

  4. Stir the cornstarch into a few tablespoons of cold water and pour it into the soup, stirring constantly, until it thickens slightly.

  5. Drizzle with sesame oil and serve; the heat here is white pepper, not chili, which is why it is sour-hot rather than mala.
