How to cook it

  1. Bring the eggs to a boil, then simmer 9 minutes, cool in cold water, peel, and set aside.

  2. Soak the dried chilies in hot water 10 minutes, then drain and blend with the shallots, garlic, and shrimp paste into a smooth paste.

  3. Heat 1 tbsp oil in a skillet and fry the peeled eggs until the surface blisters and browns in spots, then set aside.

  4. Heat the remaining oil in the same skillet and fry the paste over medium heat, stirring often, until it darkens and the oil separates, about 8 minutes.

  5. Stir in the tamarind paste, palm sugar, and salt and cook 1 minute more.

  6. Halve the eggs and gently fold them into the sambal, spooning the sauce over the top.

  7. Warm through 2 minutes.

  8. Serve hot over the jasmine rice.
