  1. If the vermicelli is not pre-roasted, dry roast it until golden, then set it aside.

  2. Heat the oil in a pan and let the mustard seeds pop, then fry the urad dal and cashews until golden.

  3. Add the curry leaves, green chilies, onion, carrot, and peas and cook until softened.
