Chicken Korma

How to cook it

Soak the cashews in hot water for 10 minutes, then blend them smooth with the yogurt.

Heat the oil in a heavy pot and cook the sliced onions until soft and golden, about 10 minutes.

Add the garlic, ginger, cardamom, coriander, and half the garam masala and cook until fragrant, about 1 minute.

Stir in the chicken pieces and salt and sear for 4 minutes.

Lower the heat, stir in the cashew yogurt, and simmer gently until the chicken is tender, about 18 minutes, stirring so it does not catch.

Finish with the cream and remaining garam masala, warm through, and serve over the basmati rice.
