How to cook it

  1. Slice the shiitake mushrooms thickly.

  2. Heat the oil in a heavy pot over medium-high heat and brown the chicken, skin-side down first, until golden, about 4 minutes per side, then set aside.

  3. Add the ginger, garlic, and the white parts of the scallions to the pot and cook until fragrant, about 1 minute.

  4. Add the mushrooms and stir-fry until they start to soften and release their liquid, about 3 minutes.

  5. Return the chicken to the pot and add the soy sauce, dark soy sauce, oyster sauce, sugar, and water.

  6. Bring to a simmer, then cover and cook over low heat, turning the chicken once, until it is very tender, about 20 minutes.

  7. Uncover and simmer a few minutes more until the sauce reduces to a rich, glossy glaze.

  8. Drizzle with the sesame oil, scatter with the green parts of the scallions, and serve hot over the rice.
