How to cook it

  1. Cut the chicken thighs into bite-sized pieces and marinate with the yogurt, ginger garlic paste, red chili powder, kashmiri chili powder, turmeric, lemon juice and salt for at least 30 minutes, longer if you have the time.

  2. Just before frying, mix the cornstarch, rice flour and egg into the marinated chicken until each piece is evenly coated in a thick, clinging batter.

  3. Heat the oil in a wide pan over medium-high heat and fry the chicken in batches, without crowding the pan, for 6 to 7 minutes, turning occasionally, until deep golden and cooked through. Drain on a paper towel.

  4. In the same pan, leave a tablespoon of oil, pop the mustard seeds, then add the curry leaves and slit green chilies and let them sizzle 30 seconds.

  5. Toss the fried chicken back in, coating it in the tempering, and cook 1 minute more. Serve hot with lemon wedges.
