How to cook it

Combine the chicken, soy sauce, vinegar, smashed garlic, bay leaves, and peppercorns in a pot and let it marinate 15 minutes.

Set the pot over medium-high heat and bring to a boil without stirring, then reduce to a simmer.

Cover and cook 20 minutes, then uncover and add the water and brown sugar.

Continue simmering, turning the chicken occasionally, until it is tender and the sauce has reduced and thickened, about 15 minutes.
