  1. Combine the beef shank, water, onion, and peppercorns in a large pot, bring to a boil, and skim any foam well.

  2. Cover and simmer very gently until the meat is falling-tender and the marrow has softened, about 3 hours.

  3. Add the corn and simmer 15 minutes.

  4. Stir in the cabbage and bok choy and cook just until wilted, about 3 minutes.

  5. Season with the fish sauce, scatter the scallions on top, and serve hot with rice, sucking the marrow from the bone.
