How to cook it

  1. Combine the tomatoes, corn, lima beans, potato, onion, and chicken broth in a large pot and bring to a simmer.

  2. Cook, stirring occasionally, until the potatoes and lima beans are tender, about 25 minutes.

  3. Stir in the shredded chicken, ketchup, vinegar, brown sugar, salt, pepper, and cayenne.

  4. Simmer uncovered, mashing some of the vegetables against the side of the pot to thicken, until the stew is thick enough to coat a spoon, about 20 minutes more.

  5. Adjust the seasoning and serve hot.
