How to cook it
-
Combine the tomatoes, corn, lima beans, potato, onion, and chicken broth in a large pot and bring to a simmer.
-
Cook, stirring occasionally, until the potatoes and lima beans are tender, about 25 minutes.
-
Stir in the shredded chicken, ketchup, vinegar, brown sugar, salt, pepper, and cayenne.
-
Simmer uncovered, mashing some of the vegetables against the side of the pot to thicken, until the stew is thick enough to coat a spoon, about 20 minutes more.
-
Adjust the seasoning and serve hot.

When to cook it
Brunswick Stew takes about 60 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
