Whisk the oil and flour together in a heavy pot over medium heat and cook, stirring constantly, until the roux turns a deep chocolate brown, about 25 minutes.

Add the onion, celery, bell pepper, and garlic and cook until softened, about 6 minutes.

Stir in the sliced sausage, cajun seasoning, thyme, cayenne, and bay leaves, then slowly whisk in the broth.

Add the chicken thighs and okra, bring to a boil, then simmer gently until the chicken is tender, about 45 minutes.

Remove the chicken, shred it, return it to the pot, season with the salt, and simmer 10 minutes more.
