How to cook it

Season the chicken with salt and pepper. Heat the oil in a large pot and brown the chicken on both sides, about 5 minutes per side, then remove.

Add the onion, celery, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.

Stir in the rice, broth, bay leaf, and cayenne, and nestle the chicken back into the pot.

Bring to a simmer, cover, and cook over low heat until the rice is tender and the chicken is cooked through, about 25 minutes.
