How to cook it

  1. Whisk the eggs with 1/2 cup of the buttermilk in one dish and combine the flour, garlic powder, salt, and pepper in another.

  2. Dredge each cube steak in the flour, then the egg, then the flour again, pressing to coat.

  3. Heat 1/2 inch of oil in a skillet to 350F and fry the steaks until golden and crisp, about 3 minutes per side, then drain.

  4. Pour off all but 3 tbsp of the oil and whisk in 3 tbsp of the seasoned flour, cooking 1 minute.

  5. Whisk in the remaining buttermilk and the milk and simmer into a peppery gravy, about 4 minutes.

  6. Serve the steaks smothered in the gravy.
