How to cook it

  1. Pat the catfish fillets dry.

  2. Mix the paprika, smoked paprika, garlic powder, onion powder, thyme, cayenne, salt, and pepper into a blackening spice.

  3. Coat both sides of each fillet generously with the spice mixture.

  4. Melt 2 tbsp butter in a cast-iron skillet over high heat until it just begins to smoke.

  5. Cook the fillets until the crust is charred and the fish flakes easily, about 3 minutes per side, adding more butter as needed.

  6. Squeeze the lemon over the top and serve.
