Core and finely shred the cabbage.

Coarsely pound or pulse the grated coconut with the shallots, garlic, green chilies, and cumin seeds into a rough, chunky paste.

Heat the coconut oil in a wide pan, let the mustard seeds pop, then add the dried red chilies and curry leaves.

Add the shredded cabbage, turmeric, and salt, toss well, cover, and cook on medium-low, stirring occasionally, until the cabbage is just tender, about 10 minutes.

Fold in the pounded coconut mixture, cook uncovered for 3 minutes to let the raw edge cook off, and serve warm.
