How to cook it

  1. Peel the chayote, halve, and finely dice, discarding the soft central seed.

  2. Heat the coconut oil in a pan, let the mustard seeds pop, then add the urad dal and chana dal and cook until golden.

  3. Add the dried red chilies, curry leaves, and slit green chili and let them sizzle.

  4. Add the diced chayote, turmeric, and salt, toss well, cover, and cook on medium-low until tender, about 12 minutes.

  5. Uncover, cook off any extra moisture, fold in the grated coconut, and cook 2 minutes more before serving.
