Core the cabbage and shred it finely.

Heat the coconut oil in a wide pan, let the mustard seeds pop, then add the urad dal and chana dal and cook until golden.

Add the dried red chilies, curry leaves, and slit green chili and let them sizzle.

Add the shredded cabbage, turmeric, and salt, toss well, cover, and cook on medium-low, stirring now and then, until the cabbage is tender but still has a little bite, about 10 minutes.

Fold in the grated coconut, cook 2 minutes, and serve warm with rice and sambar.
