How to cook it

  1. Cut the potato and eggplant into large, roughly equal chunks; cut the green pepper into large squares.

  2. Heat half the oil in a wok over medium-high heat and fry the potato chunks 5 minutes, turning, until golden on the edges, then remove.

  3. Add the remaining oil and fry the eggplant 4 minutes, until softened and lightly browned, then remove.

  4. Add the garlic to the wok and stir-fry a few seconds, then return the potato and eggplant along with the green pepper.

  5. Whisk the soy sauce, sugar, cornstarch and water together and pour into the wok.

  6. Toss everything together 2 minutes until the sauce thickens and coats the vegetables, then serve.
