How to cook it

  1. Ask the butcher to grind patinho for you, or buy it already ground. It is a lean cut, so there is almost no fat to pour off. Peel the chuchu, potato and carrot and cut them into small cubes.

  2. Heat the oil in a large pan, fry the onion until soft, add the garlic and salt for a minute, then add the beef and cook over a high heat, breaking it up, until it has lost its pink color and the liquid has dried off.

  3. Add the tomato and cook for 3 minutes until it softens into a sauce. Stir in the potato, carrot and chuchu with the water, cover and cook over a low heat for 15 to 20 minutes, stirring now and then, until the vegetables are tender. The chuchu gives off plenty of liquid, so add more water only if the pan starts to stick.

  4. Finish with the chopped cheiro-verde, the parsley and green onion, and serve with arroz and feijao.
