How to cook it

  1. Put the chicken in a large pot with the ginger, sliced, and the water, and bring to a boil, skimming off any foam.

  2. Reduce to a simmer and cook until the chicken is just cooked through, about 30 minutes.

  3. Lift the chicken out, let it cool slightly, and shred the meat off the bone, returning the bones to the pot to keep simmering.

  4. Rinse the rice and add it to the simmering broth along with the shallots.

  5. Simmer, stirring occasionally, until the rice breaks down into a thick, soupy porridge, about 20 minutes; remove the bones once the broth is well flavored.

  6. Season with the fish sauce and black pepper.

  7. Stir the shredded chicken back through the porridge to warm it.

  8. Ladle into bowls, scatter with scallions, and serve hot. This is the dish a household turns to first when someone is unwell.
