How to cook it

  1. Heat the olive oil in a large pot and cook the onion and garlic over medium heat for 3 minutes, then stir in the cumin, coriander and turmeric and cook for 1 minute, until fragrant.

  2. Add the carrots, turnips, chickpeas, tomatoes and 3 cups of the vegetable broth, bring to a boil, then lower to a simmer, cover, and cook for 20 minutes.

  3. Add the zucchini and simmer, uncovered, for 15 minutes more, until all the vegetables are tender, then season with the salt and pepper.

  4. Meanwhile, bring the remaining 1 cup of broth to a boil, pour it over the couscous in a heatproof bowl, cover, and let it stand for 5 minutes, then fluff with a fork.

  5. Mound the couscous on a platter and spoon the vegetables, chickpeas and plenty of broth over the top.

  6. Scatter the cilantro over everything before bringing it to the table; the vegetables and chickpeas make this a complete meatless plate.
