How to cook it

  1. Cut the chicken thighs into large chunks through the bone and peel and cube the potato.

  2. Heat the oil in a pot over medium-high heat and brown the chicken pieces on all sides, about 5 minutes.

  3. Add the ginger, garlic and star anise and stir 30 seconds until fragrant.

  4. Stir in the sugar, both soy sauces and the water, and bring to a boil.

  5. Add the potato, cover, and simmer 25 minutes, until the chicken is tender and the potato is cooked through.

  6. Uncover and simmer 5 more minutes to thicken the sauce, then scatter with scallions and serve.
