How to cook it

  1. Put the water in a small pan with the crushed cardamom pods and bring it to a boil.

  2. Add the tea leaves and boil hard for 2 minutes so the water turns deep red-brown.

  3. Pour in the milk and bring the whole thing back to a boil, watching it so it does not climb over the side.

  4. Lower the flame and let it simmer 4 minutes, lifting a ladleful and pouring it back from a height two or three times. That aeration is what makes the difference between tea and chai.

  5. Add the sugar, stir, and strain into cups.

  6. Make a child's cup weaker and milkier from the same pan, and serve with paratha or a rusk.
