How to cook it

  1. Peel and dice the potatoes into small even cubes so they fry rather than steam.

  2. Heat the oil in a wide pan and pop the cumin seeds, then add the sliced onion and fry 4 minutes until soft.

  3. Add the potato with the turmeric, red chili powder, coriander powder and salt and toss until every cube is coated.

  4. Cover and cook on a low flame 10 minutes, shaking the pan rather than stirring so the cubes keep their shape.

  5. Uncover, raise the heat and fry 4 minutes more until the edges are crisp and golden.

  6. Finish with amchur, chopped green chilies and coriander leaves. This is as good beside a puri at breakfast as it is beside a daal at night.
