How to cook it

  1. Cut the cauliflower into medium florets and the potato into wedges of about the same size.

  2. Heat the oil in a wide pan, pop the cumin seeds, then fry the sliced onion until golden, about 6 minutes, and add the ginger garlic paste for 1 minute.

  3. Add the chopped tomato with the turmeric, red chili powder, coriander powder and salt and bhunno 5 minutes until the oil separates.

  4. Add the potato first and fry 4 minutes, then the cauliflower, turning everything through the masala.

  5. Cover and cook on a low flame 15 minutes, shaking the pan occasionally rather than stirring, until both are tender and the florets are still whole.

  6. Finish with garam masala, julienned ginger, slit green chilies and coriander leaves. Serve with hot roti.
