How to cook it

  1. Heat the oil in a pressure cooker and fry the sliced onion until golden brown, about 8 minutes. Add the ginger garlic paste and cook 1 minute.

  2. Add the beef and sear it over high heat for 6 minutes until it loses its raw colour and the water it releases has boiled away.

  3. Add the chopped tomato, turmeric, red chili powder, coriander powder, cumin, bay leaves, peppercorns and salt, and bhunno for 10 minutes until the tomato dissolves and the oil separates clean at the edges. Do not rush this step.

  4. Pour in the water, close the cooker and cook 25 minutes under pressure, or simmer covered 90 minutes, until the beef is tender enough to pull apart.

  5. Add the quartered potatoes and cook a further 10 minutes under pressure or 20 minutes covered, until they are soft and have thickened the shorba.

  6. Finish with garam masala, slit green chilies and coriander leaves, and let it sit 5 minutes off the heat. Serve with hot roti.
