Heat the oil and fry the chopped onion until golden, about 6 minutes, then add the ginger garlic paste for 1 minute.

Add the mince and break it up as it browns, cooking 8 minutes until its liquid has evaporated.

Add the chopped tomato, turmeric, red chili powder, coriander powder, cumin and salt and bhunno 6 minutes until the oil separates.

Stir in the diced potato so every cube is coated in masala, then add the water and cover.

Simmer 15 minutes until the potato is soft and has thickened what liquid is left. The finished dish should be moist, not soupy.

Finish with garam masala, slit green chilies and coriander leaves. Serve with hot roti.
