How to cook it

  1. Peel and dice the potatoes small so they cook quickly and evenly.

  2. Heat the oil, fry the sliced onion 3 minutes, then add the potato with the turmeric, red chili powder, cumin and salt.

  3. Cover and cook on a low flame 10 minutes, shaking the pan occasionally, until the potato is tender.

  4. Uncover, raise the heat and fry 3 minutes until the cubes catch a little colour at the edges.

  5. Beat the eggs and pour them over the potato, then fold everything together gently for 2 minutes until the egg has just set around the cubes.

  6. Finish with chopped green chilies and coriander leaves and serve hot with paratha.
