How to cook it

  1. Slice the tofu into half-inch slabs and pat dry.

  2. Heat the oil in a skillet and pan-fry the tofu until golden on both sides, about 3 minutes per side, then push to one side.

  3. Whisk the soy sauce, gochugaru, sugar, minced garlic, and water into a sauce and pour it over the tofu with the diced onion.

  4. Simmer 8 minutes, spooning the sauce over the tofu occasionally, until it reduces to a glaze.

  5. Finish with sesame oil, scatter with scallions and sesame seeds, and serve warm.
