Soak the pork bones in cold water for 1 hour, changing the water once, to draw out blood and impurities.

Blanch the bones in boiling water for 5 minutes, then drain and rinse well.

Simmer the bones in the measured water for 1 hour, skimming occasionally, until the broth turns rich and cloudy white.

Whisk in the gochugaru, doenjang, minced garlic, and ginger, then add the whole potatoes and simmer 20 minutes.

Add the napa cabbage and simmer 10 minutes more until the meat is falling-off-the-bone tender.
