Cut the mackerel into thick steaks and score the skin lightly.

Layer the sliced radish in the bottom of a wide pan to keep the fish from sticking.

Whisk the soy sauce, gochugaru, gochujang, sugar, minced garlic, and ginger with the water for the sauce.

Lay the mackerel over the radish, pour the sauce over, and scatter the sliced onion on top.
