How to cook it

  1. Whisk the cornmeal and salt in a bowl, then pour in the boiling water, stirring constantly, until a thick, smooth batter forms; let sit 5 minutes.

  2. Stir in the milk and sugar until the batter loosens to a thick pancake consistency.

  3. Heat a griddle or skillet over medium heat and butter it lightly.

  4. Drop spoonfuls of batter onto the griddle and cook until the edges are crisp and golden, about 4 minutes, then flip and cook the other side, another 3 minutes.

  5. Serve hot with butter and maple syrup.
