How to cook it

  1. Rub the chicken with half the turmeric and a little of the salt, then brown it in the ghee in a heavy pot; remove and set aside.

  2. Fry the ginger, garlic, cinnamon, cardamom and cumin in the remaining fat until fragrant.

  3. Stir in the rice and remaining turmeric and toast 1 minute.

  4. Return the chicken to the pot, add water to just cover the rice, and bring to a boil.

  5. Cover tightly and cook on low, mostly unattended, until the rice is tender and the chicken is cooked through, about 25 minutes.

  6. Let rest covered 10 minutes before fluffing. Mild, yellow with turmeric, and the honest home dish for a halal household.
