How to cook it

  1. Soak the glutinous rice overnight, then drain and steam until translucent and tender, about 20 minutes.

  2. Warm most of the coconut milk with the palm sugar and salt until dissolved.

  3. Pour two thirds of the sweetened coconut milk over the hot rice, stir gently, and let stand 15 minutes to absorb.

  4. Toast the split mung beans in a dry pan until fragrant and lightly golden.

  5. Slice the ripe mango.

  6. Serve the rice with mango alongside, drizzled with the remaining sweetened coconut milk and topped with the toasted mung beans, at the peak of the hot-season mango crop.
