How to cook it

Heat the oven to 325F.

Pulse the onion in a food processor and squeeze out the liquid, then process it with the lamb, beef, garlic, oregano, cumin, and salt into a smooth paste.

Press the mixture into a loaf pan and bake until firm and cooked through, about 40 minutes, then rest and slice it thinly.
