How to cook it

  1. Heat the oven to 325F.

  2. Pulse the onion in a food processor and squeeze out the liquid, then process it with the lamb, beef, garlic, oregano, cumin, and salt into a smooth paste.

  3. Press the mixture into a loaf pan and bake until firm and cooked through, about 40 minutes, then rest and slice it thinly.

  5. Warm the pita breads.

  6. Serve the sliced gyro meat with the tzatziki, chopped tomatoes, red onion, and warm pita.
