How to cook it

  1. Pulse the drained chickpeas, onion, garlic, parsley, cumin, coriander, and salt in a food processor into a coarse, sticky paste.

  2. Pulse in the flour and baking powder, then shape the mixture into 16 small patties.

  3. Heat the frying oil to 350F and fry the falafel in batches until deep golden and crisp, about 4 minutes, then drain.

  4. Thin the tahini with the juice of one lemon and a little water into a drizzling sauce.

  5. Warm the pita and cut into wedges, and dice the cucumber and tomatoes with a squeeze of lemon.

  6. Build plates with falafel, hummus, the salad, pita, and a drizzle of tahini sauce.
