How to cook it

  1. Heat the oven to 400F.

  2. Slice the eggplants, zucchini, potatoes, tomatoes, and onion into thin rounds.

  3. Toss the vegetables in a large bowl with the olive oil, garlic, oregano, and salt.

  4. Arrange the slices in overlapping rows in a large baking dish.

  5. Cover with foil and bake 40 minutes, then uncover and bake until the vegetables are tender and lightly browned, about 25 minutes more.

  6. Scatter with parsley and serve warm.
